It’s Spring, and we are in full on garden mode. Thus far, we have planted:

  • Nectarine Tree
  • Lettuce
  • Radishes
  • Spinage
  • Banana Peppers
  • Chives
  • Broccoli
  • Peas
  • Tomatoes
  • And, plants. Lots of plants.

I’ll be honest, the hubs has more of a green thumb than I do. Or maybe he is just more dedicated to making the outside of the house look pretty. Whichever the case, he does a wonderful job landscaping and I’m always there to cheer him on. It is amazing to see the difference in the way the outside of the house looks now as opposed to when we first moved in, almost a year ago.

We just planted three tomato plants in our garden. I can’t wait until they start producing fresh fruit. The hubs may dislike them, but tomatoes are my favorite.
Our garden is going to be awesome this year. Well, maybe not awesome but it will be better than last year.

Today marks the second day of my 25 Days of Cookies challenge. As the name states, the goal is to bake 25 cookie recipes each day until Christmas Day. I got the idea from a blog awhile back and thought that it sounded like a perfect way to spend my evenings. Don’t judge me.
Since the decision was made later in the day and with little forethought, I decided to do something quick and easy that wouldn’t require me to go to the store to purchase extra ingredients. This proved to be a bit challenging since our cupboards are pretty bare.
Peanut butter cookies from one of my favorites, marthastewart.com, was what I eventually settled on. I’m not particularly fond of this type of cookie but my husband is, and I had all the necessary ingredients.
The recipe was very simple and good. I will definitely use it again. I put some of the dough in the freezer for future baked good baskets — get ready neighbors and friends.
Peanut Butter Cookies
Ingredients  1 1/2 cups crunchy peanut butter
1 cup packed light-brown sugar
1/2 cup (1 stick) softened unsalted butter
1 large egg
1 1/2 cups all-purpose flour, (spooned and leveled)
1 teaspoon baking powder
Directions 
Preheat oven to 350  degrees. In a  medium bowl, whisk together flour  and baking powder; set aside.
In a large bowl, beat peanut butter, sugar, and butter until smooth.  Beat in egg. Gradually add flour mixture, beating to combine.
Pinch off dough by the tablespoon; roll into balls.  Place 2 inches  apart on parchment-lined baking sheets. Using a fork, press balls in a  crisscross pattern, flattening to a 1/2-inch thickness.
Bake cookies, rotating halfway through, until lightly golden, 18 to 22 minutes. Cool cookies on a wire rack.

Just got out of a meeting where I was twitching, continuously.
